Olivegrove Extra Virgin Olive Oil Roasted Vegetables

Simple, rustic and packed with flavour.

Ingredients:

• 1 pumpkin, chopped

• 1 potato, chopped

• 1 cauliflower, chopped

• 1 Zucchini, chopped

• 1 red onion, cut into wedges

• 2 tbsp extra virgin olive oil

• 1 tsp dried thyme or rosemary

• Salt & pepper

Directions:

1. Preheat oven to 200°C.

2. Toss veggies with olive oil, herbs, salt, and pepper.

3. Roast for 25–30 minutes or until golden and tender.
